1cButter; softened
1cSugar
2 3/4cFlour, cake
1tbBaking powder
1/2tsSalt
1cMilk
1tsExtract, vanilla
6 Egg whites
1cSugar
NUTTY FRUIT FILLING
8 Egg yolks
1 1/4cSugar
1/2cButter
3 1/2ozCoconut, flaked
1cPecan pieces
1cCandied cherries; chopped
1cRaisins
1/2cSherry; or bourbon
CREAMY WHITE FROSTING
1 1/2cSugar
1/3cWater
1tbCorn syrup; dark
1/4tsSalt
2 Egg whites
1tsExtract, vanilla
GARNISH
  Flaked coconut
  Candied cherries; red and
  Green

Preheat oven to 350 F. Cream butter; gradually add sugar, beating at medium speed until light and fluffy. Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix after each addition. Stir in vanilla.

Beat room-temperature egg whites at high speed 1 minute. Gradually add sugar, beating until stiff peaks form. Fold into creamed mixture. Pour batter into 4 greased and floured 9" round cake pans. Bake 15-18 minutes, until wooden pick inserted in center comes out clean.

Nutty Fruit Filling: combine egg yolks, sugar, and butter in heavy saucepan. Cook over medium heat, stirring constantly, 5 minutes, until thickened. Remove from heat; stir in remaining ingredients. Cool.

Cool in pan 10 minutes; remove from pans and let cool completely on wire racks.

Creamy White Frosting: combine first 4 ingredients in heavy saucepan. Cook over medium heat, stirring constantly, until sugar dissolves and mixture boils. Cook, without stirring, to soft-ball stage, 240 F. Beat room-temperature egg whites until soft peaks form; continue to beat, slowly adding syrup mixture. Add vanilla; continue beating until stiff peaks form and frosting is thick enough to spread.

Spread Nutty Fruit Filling between layers; spread Creamy White Frosting on top and sides. Press coconut into sides, if desired, and garnish top with candied cherries.
